Every night I’m grateful that my dad is a restauranteur and chef extraordinaire. He started out with the south Indian cusine he grew up on, then expanded to French, Italian, Mexican, Greek…
We are constantly trying out new recipes from across the globe, both for the restaurants and for our own pleasure, but we always enjoy returning to my dad’s speciality: wood-fired pizza.
This traditional Italian dish is perfection. There’s maiz, with crème fraiche, corn and bacon; Mushroom, sausage and mozarella; and of course pizza Margherita, the unbeatable combination of tomato, basil and mozarella.
I can’t include the recipes for the dough and sauce, as they’re used at the restaurant, but I couldn’t resist posting these pictures. Thank you Papa!
